Cante is a Spanish fire-grill restaurant inside Canopy by Hilton Bangkok Sukhumvit, but the mood is much more taberna than hotel dining room. Chef Sandro Aguilera builds the menu around sharing, with tapas, conservas, grilled seafood, Iberian pork, paella, and plenty of food that picks up smoke and char from the fire. Spanish wine, vermouth, sangria, and cocktails keep the table going well past the first round of plates.
