This series is designed to explore ingredients, flavors, sustainability and the circularity of dining and drinking.

Volume one is an homage to where wasteland began, with our long time collaborator and friends, ‘Bo.lan’ a pioneer of sustainability in Thailand’s F&B.

We will co-create a cocktail tasting menu paired with Bo.lan offerings. Centered around Bo.lan’s core principles: locality, sustainability, and culinary wisdom.

This experience will showcase our collaborative works in transforming surplus and byproducts into a genuinely circular culinary and creative experience.
